So last night I was babysitting and making everyone homemade buffalo chicken and I forgot to keep some plain chicken aside for my own dinner š This meant I had to get creative and use whatever I could find in the refrigerator!!! Luckily, the family is so lovely to me and got me some red lentil pasta I could eat whenever I was over! Thatās when my creative juices got flowing and I created this deliciously flavored pasta š enjoy š ā£ ā£
Ingredients:ā£ š Pinch of salt ā£ š Pinch of oregano ā£ š 1/2 cup of red lentil pasta ā£ š Handful of kale ā£ š 5 pieces of bacon ā£ š 1/4 of an onionā£ š olive oil ā£ ā£ To Make: (one serving)ā£ š bake bacon in oven at 375 for about 10 minutes ā£ š chop onion into small bits that look like rice ā£ š boil red lentil pasta and drain once soft ā£ š place crushed bacon, onion, and pasta into a pot with olive oil, kale, and spices ā£ š heat all ingredients until kale is soft and wilted ā£ ā£ I hope you love this as much as I did! It may seem like an odd combination but I promise itās so delicious. ā£
