Egg Cups (Paleo)

I love eggs and I love bacon, mixing them together became my favorite breakfast, brunch, and lunch treat! Super easy to make, super easy to eat, and super delicious. Great for any time in the day, especially when you just need a quick grab and go morsel of protein.


Ingredients:

- Coconut oil

- Eggs

- Chives

- Bacon or Prosciutto


Step-By-Step:

1. Start by preheating your oven to 350

2. Then grease your cupcake/muffin tin with coconut or olive oil. I use Carrington Farms because it has no additives and is so easy to use.



3. Break your prosciutto/bacon into third and line the tin. Make sure that no metal is showing through and that the meat can reach all the way to the brim. It doesn't have to be perfect!



4. Crack an egg in the center (don't worry about mixing them unless you prefer them that way)

I use Pete and Gerry's Organic Eggs because they are antibiotic/hormone/synthetic pesticide/GMO feed-free!


5. Sprinkle with chives or spices of your choice (I don't recommend salt because the bacon/prosciutto will make it salty enough!)


6. Bake for about 30-40 minutes or until the egg is not 'jiggly'

7. Remove from oven and enjoy while it's hot or refrigerate for later!
