Chocolate Banana Muffins (Paleo)

Recently I successfully reintroduced eggs and almonds; and let me tell you, it was a life changer! I can now make baked goods that are fluffy and have a great moist texture. Below is the recipe for these delicious chocolate banana muffins that are great for breakfast or a quick on the go snack.



Ingredients:

- 2 bananas

- 2 eggs

- 2 tbs of cacao

- 1/4 cup of coconut sugar

- 3/4 cup of almond flour

- 1 tsp of vanilla extract

- 1/2 tsp of baking powder


Step-by-Step Instructions:

1. Preheat your oven to 350

2. Start by peeling and mashing your bananas

3. Add two eggs to the mashed bananas and mix together until a thick and smooth liquid forms



4. Add cacao, coconut sugar, vanilla, and baking powder and whisk until blended



5. Slowly add the almond flour (quarter by quarter) and whisk until smooth (the texture shouldn't be super runny at this point)




6. Line cupcake tin with cupcake wrappers and pour batter into containers




7. Bake for thirty minutes and let cool

8. Enjoy with a glass of almond milk and cup of berries! Yields 9 muffins.
