AIP, Paleo, GF, V Bubble Tea

Last night my mom had a craving for bubble tea and it got me thinking...boba a.k.a. the bubbles, are just tapioca but restaurants and tea places soak them in a sugary syrup, which makes them non-compliant. I found a recipe online with @thethingswellmake for the boba and made my own AIP tea blend. Hope you enjoy as much as I am right now! 𝘉𝘰𝘣𝘢 𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴: 🔅1 cup of Tapioca Starch 🔅1/2 cup of boiling water

𝘛𝘰 𝘔𝘢𝘬𝘦: 🔅Put tapioca in large bowl 🔅Boil 1/2 cup of water 🔅Incrementally pour the water into tapioca and stir with spoon 🔅Once a dough is firm, flatten and cut with knife 🔅Place into a bowl of boiling water and let the boba rise to the top 🔅Pour water and boba into a can 🔅OPTIONAL: sweeten with honey by adding it into can 𝘛𝘦𝘢 𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴: 🔅2 Bags of your tea of choice boiled and cooled over night 🔅1 can of coconut milk 🔅12 ice cubes 𝘛𝘰 𝘔𝘢𝘬𝘦: 🔅In a blender, mix coconut milk with ice cubes 🔅Combine with tea in mug or cup Blend your boba and tea mix and enjoy this refreshing drink!
