After a few days in NYC with my Aunt, I have come back home feeling refreshed, relaxed, and ready to start some new projects. My creative juices are at an all time high! I decided to experiment in the kitchen a little bit in order to satisfy my sweet tooth.
When I was little, my grandpa used to take me to an ice-cream shop and we would share a banana split. This dessert is something sentimental to me but also just really delicious and satisfying. As simple as this recipe is, it was not something that I thought of until recently! Sometimes, when you spend so much time cooking according to a specific diet, you forget to have fun and try new things!
Ingredients:
- One banana
- 2tbs of melted homemade* cacao chips (carob if AIP)
- 2tbs of AIP caramel
- toppings of your choosing (crushed almonds, berries, tigernuts)
*importance of homemade chips is that most cacao and carob chips sold in stores have soy, milk, or preservatives in them. It is critical to read labels!*
Step by Step Instructions:
1. Take your banana and cut off any brown spots. The whole end of mine was brown and gooey so I took the whole end off!
2. Hollow out the center of your banana to create a type of boat! I did this by cutting a small rectangle down the center and then scraping it out with a tiny knife.
3. Pour in melted AIP or Paleo chocolate (recipe to follow). Mine got a little messy because I put in too much chocolate so it overflowed, who am I kidding, there is never too much chocolate!
4. Drizzle with AIP caramel topping (recipe to follow)
5. Top with nuts, berries, or sugar-free shredded coconut!
